Raclette is not a word one hears every day, especially not in Montreal This unfortunate reality is mainly due to the fact that our culinary landscape is greatly lacking in food of the scraped cheese variety. Just to clarify, raclette is a dish composed of baked potato strips smothered in warm, melted cow?s milk cheese that is slowly heated and subsequently scraped off with a knife. As Quebecers, this probably sounds like a poor excuse for poutine, but this Swiss dish is anything but a lazy man?s knockoff.

Introducing?Bo?te???Fromages, Montreal?s cheesiest food truck, in both senses of the word. Not only is the vehicle inscribed with the words ?Ch?vre-au-Lait? but every entr?e on the menu features a generous portion of warm, gooey Swiss cheese.

Wednesday evening, Bo?te???Fromages was parked on the southern-most point of Victoria Square in Old Montreal. The truck attracted a long line of eager dairy lovers. When we made it to the front, we opted for one original and one beef and caramelized onion raclette, a side of gazpacho and an iced tea. Our names were called minutes later, snapping us out of our mystified trances induced by the sight of the chef scraping down his massive block of cheese with ample precision.

The original was garnished with pearled onions and gherkins, essentially midget vegetables. Their salty crunch complemented the softness of the potatoes and cheese, and although the meal as a whole was quite salty (still, no complaints). The beef was also delicious? the pulled brisket was both juicy and sweet and really cut through the saltiness of the cheese.

Two hits for Bo?te???Fromages, but maybe they should just stick to the fromage. The iced tea was glorified sugar water and the gazpacho tasted eerily similar, something along the lines of purified yogurt and cucumber juice.

All in all, this weekly food truck visit was most enjoyable? the product offering was both tasty and filling. Do not let the small portions fool you. Hit up this Swiss delight when you get a chance, but BYOIT (Bring Your Own Iced Tea).
